What type of thermometer do you use with your kettle?

My kettle has a temperature probe built into it. It's often too high up the side of the pot to get a reading on mash temps, as the volume of mash water is usually lower than where the probe sticks in.

I bought a thermapen and use it for anything needing close to a precise temp measurement. I only ever glance at the built in probe to see if I'm getting in the ballpark.
 
Thermapen here. Simply the best. FWIW, my floating thermometer reads exactly the same, but is not instant.
 
I don't have MLT or HLT thermometers, I use a Thermapen for that. My boil kettle (and for large batches HLT) has a weldless Blichmann Brewmometer. I use it for monitoring ramp to boiling, and for monitoring chilling. And when I do use it as HLT, I'll use it for rough approximation of mash/sparge water temps, and use the Thermapen to confirm.
