The long debate about what length has overwhelmed me in my herms build. Would 25ft of 1/2 stainless be sufficient enough or should I go with the 50ft big boy? Hlt is a keggle. Or 3/8?

I say 1/2".
25' is pretty minimal. If you have the room, go with as much as you can fit in there. When you price the ss, you'll see that it isn't that much more for a full 50'.
I use about 40' of 1/2", and it holds the heat perfectly, but it won't do step mashes with 12 or 13 lbs of grain and water.
