What happens if u pitch too much yeast?

Long story short, I have a tripel in the primary with an OG of 1.075. It didn't show any signs of activity after adding the yeast one week ago. I added two more vials after confirming that the gravity was still above 1.070.

My question is: should I consider today to be day 1 now?
 
I would guess you didn't make a starter?
If not three vials is about right.
 
Three vials of yeast is fine. I wouldn't really think about it in terms of 'days'. The beer started fermenting when you added the first vial of yeast, it will be done fermenting when there is no more sugar for the yeast to consume. Let it go for about 3 weeks and take a gravity reading, then let it go another week, take a second reading. If it doesn't go down, primary fermentation is done.
