1# Clover honey
4oz light brown sugar
2oz fresh made strawberry jelly
2 Kiwis cut squeezed and steeped
White labs 001

OG- 1.053

Any thought on how you would have changed this????
 
IMHO I think your OG is too low. Not quite sure what you are trying to achieve with just 2 oz of strawberry jam...not going to get much flavor impact from that. If it were me I would do:
2 # clover honey
12 oz strawberry jam (recommend seedless)
3 peeled & mashed kiwi (recommend place in nylon/straining bag)
1.5-2 tsp pectic enzyme
1/4 tsp yeast nutrient
1/4 tsp yeast energizer
water to 1 gallon
Cote de Blanc pitched after all of the above have sat overnight
OG 1.080-1.100 *use a light brown simple syrup to increase OG if needed

+1 OG is too low. Add more honey.

I also question the use of strawberry jelly. Jelly contains pectin, which you don't want in a mead. Why not just use fresh strawberries? I would also increase the amount. Two ounces will be lost. Two pounds per gallon is more like it.

I would guess that your mead will be lacking in the flavor department.
