Went to bottle Hefe from primary and airlock just bubbled!

OK, I found a hefe recipe that said after two weeks in the primary, bottled directly. So, I was just about to stick my siphon in and rack it to the bottling bucket and it bubbled... 15 days after I brewed it! I had noticed it was pushing the airlock pretty well, but not bubbling. My LHBS guy just said to bottle it, as of an hour ago. But this bubble has me worried for explosion reasons!

Maybe it's due to bringing it upstairs from basement 5 hours ago and it's getting warmer?

Any suggestions... I'm ready to bottle right now!!!!!!!!
 
That is just CO2 coming out of solution from both the agitation of moving the primary and the temperature change. Go ahead and bottle, chances are you'll be fine! The best way to be sure though is to take hydrometer readings over a couple days to make sure it's not moving. I've never had a hefe that didn't finish in a week though so you'll be fine I think!
 
Thanks, that's what I was hoping and figured. It went nuts for 5 days and died right down so it's been inactive for the last week at least. I'll go ahead and keep my fingers crossed.
 
to re-iterate bradsul - GET THEE A HYDROMETER!

its the one surefire way to know beer is done.
 
:mug: My LHBS owner swears by the two minute bubble method and it works pretty good for me. If the bubbles are two minutes apart then it is okay to bottle.

Indeed, trust the hydro. My last hefe fermed for maybe 1.5 days tops and it was done. 8 primary days and it went into the bottles. If your grav is the same 2 days in a row, you're done.

Well, while a hydrometer is cheap insurance at $8 I wouldn't say that you're an idiot not to take a hydro reading. There are a lot of ways to the same outcome.
