Man, I have never seen a 3 piece airlock blow like this. It's been going since last night. Pffffffffffffffffffffftt, pause, Pffffffffffffffffft, pause, etc.

So far my 5.5 gallon batch still has the lid on the 7.9 gallon bucket primary, but the airlock sure has had a workout. I've had to add more vodka already when normally it takes a few days, but with so much CO2 going through it, it's evaporating quicker.

I love it when a plan comes together.

the one and only up and out the airlock fermentation I had was a Hefe. It was my second batch so it scared the crap out of me. I thought it may blow up. Man it turned out great.

It was amazing. I made a starter for the Wyeast 3068 and stepped it up and the Friday before brewday, I poured some of it into a erlemyer flask with a pint of fresh Wheat DME wort and put it on the stir plate till Saturday afternoon.

It worked great and I've now split the big starter into three 24 oz. Corona bottles, capped them and put them in the fridge. I waited till fermentation ceased before bottling so hopefully I won't have any bottle bombs in the fridge, but I'm ready for another batch soon. Perhaps in two weekends when I brew again.

I wonder if there's something about those german strains. The one time I had a blow-up was with an altbier, can't remember which Wyeast strain it was (whatever BYO had for their Alaska Amber clone). Went to bed with the airlock bubbling merrily away and woke up the next morning to find the bucket lid was a good five feet from the bucket and yeasty stuff was EVERYWHERE! Did I mention that the bucket was in the bedroom closet directly beneath the hangers? I had to wash almost every shirt I own, the closet wall, and the floor. I tossed the beer as a total bust (if it happened now I'd probably keep fermenting and see what happens) and was one very unhappy camper. The wife and I both slept through this eruption; about the only positive thing was that none of her clothes had been hit in the blast. That might have meant the end of my homebrewing life....
