I just picked a couple of nice watermelons from the garden and I wAs thinking of running them through the juicer, and adding some yeast to make a watermelon cider. Do I really need to boil this first? All my ciders before have been made from bottled juice, this would be the first time using freshly juiced juice.

Use one campden tablet per gallon and wait 24 hours before pitching the yeast.

I would boil and then add an ethanol starter, such as a small amount of vodka. Watermelon juice has a tendency to turn rancid really quickly on its own. Learned that after my watermelon wine turned out as watermelon rot.
