Volume of yeast starters and pkgs of yeast?

Hello, I have only made a few yeast starters and normally just pitch more yeast, but recently I have been trying to use starters. I use Mr malty yeast pitch rate calculator and on my bigger beers (over 1.075 OG) it usually tells me to use 2 pkgs of liquid yeast and a 1 liter starter, can't I just use 1 pkg of yeast and a 2 liter starter to get similar cell production? Some of the reason I want to do starters on bigger beers is so I don't have to pitch multiple packs of liquid yeast.

You can indeed. I believe most people, myself included, just use one package of yeast and make an appropriate sized starter for the necessary cell count. You can always step up your starters if you don't have a stir plate...
 
With liquid yeasts it depends on the packaging date of the yeast. Most calculators ( I use BeerSmith) base the amount of yeast needed based on the age (viability) of the yeast.
With fresh yeast (month or less old) I use one pkg. The pkg quantity recommended will also take into account whether or not you use a stir plate.
I generally avg 1-1.5 liter starters using a stir plate(s)
