My next brew is going to NBs St Paul Porter. I want to add some cinnamon and vanilla extract to increase the flavors. When and how much should I add each of these? I was thinking if adding the cinnamon at flameout and the vanilla to the bottling bucket? I just don't know how much would bring out those flavors?

For cinnamon, I'd throw a cinnamon stick in with yoru flavor hops - say 10 minute boil. A single vanilla pod in the secondary would be plenty, I would think.

Yea don't bother with vanilla extract. If you want vanilla use real beans. As for cinnamon do like the poster said before me. 1-2 sticks in the secondary.
