Yeast
1 Pkgs American Ale WY1056 in a 1.5L starter on a stir plate for 24 hours. Cold crashed for 48 hours and decanted. Warmed to room temp on brew day and added 500mL 1.040 wort and put it back on the stir plate until pitching (~4 hours)

Kegged after 18 days in primary, peak flavor was after about 15 days in the keg. This allowed the hops to mellow a bit and the roastiness to come through.

This beer has a lot going on, but the malt and hops balance nicely once it's mellowed a bit, and it's gotten nothing but praise from friends and local homebrewers. I'll be entering it in a competition in January.
