I’ve been vacuum sealing my used Wyeast and storing them in the fridge over the last 2 months or so to be reused. Some I’ll open and reuse every 2 or three weeks, a couple of the others have been sitting idle for the 2 months.

How long can I expect them to stay fresh in a vacuum sealed air tight food saver bag?

I've saved yeast in plastic containers with snap on lids for 5-6 months, so I'd guess you'll be good for that long at least.
