Using a mypin pid or stc-1000 to build a BBQ fan temp controller?

I have both a Mypin PID (with an SSR) and a STC-1000 left over from planned but not completed projects and I was thinking of using one or the other to build a temp controller for my Big Steel Keg which is a kamodo-type cooker similar to a big green egg.

For many years I have used this auberins controller* for my cooker but a few months ago it died and rather than spend another ~$150 to replace it I thought I would build a DIY fan controller. I still have the fan that came with the auberins as well as the k-type temp probe.

Just curious if any of you HBT electronics wizards had already completed such a project and what devices did you use?

The STC cannot use a type K thermocouple. It uses a thermistor probe, and the one that comes with the STC is plastic. Probably not a good match for the application. You could look for an equivalent metal sheathed thermistor probe (but make sure it has the same specs [nominal resistance and beta] as the original.)

The MyPin can use the type K thermocouple probe, but you need to make sure you have a model of MyPin that has a PID controlled relay.

Not exactly what you're asking, but you could reuse your fan and the thermocouple and build a HeaterMeter. https://github.com/CapnBry/HeaterMeter/wiki

I like it because you can easily access it through WIFI or you can set up port forwarding and view and control your cook from anywhere. I'm very happy with the one I built. YMMV.
 
Thank you all for the information, pictures, and ideas. I am going to need some deep thoughts in order to decide.
 
I built one with a MyPin TD4 in a Harbor Freight Ammo Box. I used DIN Microphone connectors for the temp sensor connections. I also modified it with a switch between pins 8 & 9 I think, so I could use both PT100 and K stye temp sensors (you also have to set accordingly on the PID).

I works well. I would highly recommend a fan of some sort to keep it cool. I melted an SSR smokin in the sun on a hot summer day.

I also use when I am propane brewing with a 120V RIMS and pump.
