Okay, I have been brewing for almost three years now, and have yet to post an 'am I infected' thread, so I guess it is about time. :drunk:

I popped the top of my fermenter to check the progress and rack my low alcohol beer the other day, and was greeted by the sight in the (crappy/blurry) photo below. What, on gods green earth, am I looking at?

Now, a caveat: the yeast was somewhat old, but still well within the use by date. Also, it was fermenting very well (dropped from 1.037 to 1.012 in three days). I took a sample and didn't notice anything off.

I went ahead and racked to secondary, but am curious if I dryhopped something that I should not have.

TIA

It looks ok!

But I would suggest for next time, if you're racking to a clearing vessel, a "secondary", to use a carboy with much less headspace. Most of the infection threads come from a longer term use of a bucket, due to the oxygen being allowed in the headspace which allows mold and other things to grow.

I'd say to either not rack at all (my preference), since the co2 that was created during fermentation will still protect the beer in the headspace of the bucket, or to use a carboy to limit headspace.

It looks like yeast rafts with off-gassing between them. Like a yeast version of the opening to "Land of the Lost." Perfectly normal for a beer, though!

Thanks to everyone.

jmprdood - Yep, it will be beer. Might be interesting, but it will be beer.

Yooper - That was a pic of the initial fermentation vessel; I racked to a carboy in order to dryhop it for a bit.

TopherM - Need to rewatch the with the kiddos one of these days!
