I searched for the answer to this and didn't have any luck so excuse me if this is redundant. I have been bottle carving a batch for 2 to three weeks now and cracked one open. The head on the beer is huge but to taste, it is still very flat tasting. What could cause such a thing?
 
I carbed it for about three weeks at 70 degrees and just chilled it in the freezer for a half hour before I cracked it open.
