Trying to determine the cause of an over carbed bottle

So I have a rye ale in bottles now. I just wanted to see what does rye teste like in beer so I used an extract and steeped 1 pound of rye and 1 pound of crystal 20. I used us-05 yeast. I left the beer for 2 weeks in the fermentayion bucket. It fermented at 80F because it's hot right now where I am. I then transfered to bottles and waited another week. I tested a few bottles and they are fine, carbed just right, no bottle bombs.

Now, I made two special bottles where I added some Jack Daniel's Tenessse Honey just to see what will it do to the teste. I noticed one bottle had a very thin layer of what appears to be left over kraeusen. I also noticed the cap is comming off. I figured i'm looking at a future bottle bomb so I decided to open the bottle to have a look. THe moment I opened it I confirmed my suspision. Foam came out for almost a minuet. Then I poured some of the beer into a glass. There was an overwhelmingly sour teste like an unripe apple. The beer also smelled like rotten fruit.

I say again, the other bottles without the Jack Daniel's Honey are fine, no off flavors and no over carbonation. The bad smell and teste makes me think it might have gotten infected but I don't see how. Surly nothing could survive in an 80 proff drink, right? Any guesses what might it be?
 
Did you add the JD honey on top of the priming sugar? Maybe the yeast found something extra to eat and gave you the gift of extra CO2.

Also, at what temp did you open the bottle? Lack of any chilling can encourage some gushing.

Good thing that you chose to experiment with just two bottles.
 
What's your bottle sanitation like? Could be a dirty bottle left over from a previous batch. It might have nothing to do with the addition, just bad luck with that particular bottle.

Just a thought.
 
Jack Daniels is made through a distillation process. Honey can't be part of the distillation so it is added to the Jack for the sweetness and flavor. The krausen you saw was most likely from the yeast using the honey, and your priming sugar, to continue fermentation.

Navy stepson was just home on leave. Bought a bottle of the stuff. Terrible flavor to my palate. Jack will never cause me to wander away from Jameson.
