Well, when I tried it the first time, 6 days after bottling, it was, well, really green and weird. Obviously.

But I tried it again on Saturday (it was bottled March 4th). All I gotta say is, this beer is my tour de force so far---right up there with the first Dark Horse Stout. I'll put this up against Bell's Hopslam any day of the week. And though the recipe was originally an Imperial IPA, I do believe it's turned out to be a Double IPA instead. It showcases the malt too much to be an Imperial, I think. The oak really adds a great caramelly layer, too. I brought it to the masses ("masses" meaning my friend who taught me how to brew, and my other friend who is the beer manager at the beer/wine shop where I work) last night at my barbecue. Met with rave reviews! The carbonation is perfect...despite my distaste for corn sugar these days. I highly recommend this recipe for anyone looking for a double or imperial IPA (if it's imperial, I'd hop it more aggressively, and perhaps double the dry-hopping time). Just don't omit the oak. It really makes this beer what it is. And unlike some of my other attempts at oaking, you don't really "notice" the oak as oak...it just adds depth, without that distinct oaky harshness.

Anyway, I'm not bragging...this is more of a "thank you" to all my HBT brethren---you crazy bastards made this possible. Damn, boys and girls...here's to homebrew! :mug:

I like the sound of this beer. Was it still green after it had a longer chance to ferment in the bottle or keg?
 
When I tried it after 6 days in the bottle, it was green as green can be. I was a bit worried, because it was SO green, I thought maybe it was flawed. But after 5 weeks in the bottle, it's lost all its greenness, and it's ridiculously awesome. I had another bottle last night. Holy crap.
