I have brewed quite a few all grain batches at a local brewery. The brewmaster was always over my sholder. I brewed my first solo batch in my back yard two weeks ago. I did a Bavarian style Heff.

I bottled 4 days ago…. I know its way early but I had to try a bottle…

All I can say, if I can never make another style beer, I dont care. This was zoo spot on to a Bavarian heff, I can live off this stuff. I cant wiat to try it after aging for a few weeks.

I am addicted. BAD!!!

In the fermentor is a belgain strong with lychee fruit.
 
Sounds like you are having fun. How did you get into brewing at the local micro?

Was not working at the time, and the micro was opening up in the same building as my wifes buisness. LOL. They needed help, I had time and it was for beer. LOL

How did you add the Lychee fruit?
 
Last 15 min of the boil I added blended lychee fruit. I also plan to do a second fermentation and add more fruit depending on how strong the fruit flavor/aroma is.

I'm interested in just how much flavor of the lychee you get in your final product. Most of the flavors and aroma are lost pretty quickly at hot temperatures.
 
I was afraid to use too much. Looked online and the lychee fruit has almost 5 times the sugar a raspberry has (equal weights of said fruit).

I will taste it when transferring to second fermentation and then decide how much more fruit to add during the second fermentation.
