What is the purpose of transferring fermenting juice after 5-7 days from one container to the next? Why not leave it in the same container for the first 6-8 weeks then start the clarifying process of transferring or just leave for the full term until bottling takes place? I can see doing the transfer of you’re first process that includes the actual fruit.

Not everyone does a secondary fermentation. I only primary ferment my wines & ciders...then cold crash & transfer to my containers/bottles. Moving from one vessel to another is to get your wine/cider etc off the lees.

Nothing wrong with leaving in primary. That's what I do.

However there are certain yeast strains you should rack off the lees because they might contribute off-flavors (I think 71b is one example).
 
I start in a ferment bucket, with a cloth over it. So transfer to a fermenting jug is essential. Also, some fruit skins and seeds are high in acids and tanins, so it helps to pull to a secondary after a few days to reduce exposure to those for prolonged periods of time
