I have a cider brewing since it's my first brew and I wanted to go with something simple. I know that ciders don't have any head retention unless you use that famous Graff recipe. I also heard that torrified wheat helps with head retention. Do you think it's possible to add torrified wheat during secondary fermentation? or will that ruin things?

Without a mash to convert it, you'll ruin it as a starchy, protein rich hazy mess. If this is your first overall, keep it simple and enjoy it headless and clean. Practice getting the fermentation process right before experimenting much.
 
Thanks, that's some good advice. Apart from Brandon O's Graff recipe, do you know other cider recipes that have a good head and head retention?
