I'm currently in the process of making wine out of a 20L pail of grape juice. I'm of the understanding Ec-1118 the same strain as premier cuvée has already been added to the pail.

Am I free to add my preferred yeast strain as well? I'm looking for an opinion on this, the instructions say to start a proper culture of my preferred yeast on top of the existing Ec-1118 that's been added by the winery.
 
Here's the thing...it will either work or not work, there is no real way of knowing.

EC-1118 is a pretty aggressive yeast and I doubt that any other strain can overwhelm it, but since we are dealing with a living thing and 10 million (or billion)variables, who knows.
