Time to step my game up - recommendations for equipment needed

Hi all, i've been lurking for a while now and have read some of the countless threads and looking for a little advise from the "experts" around here.

Back story -
I had gotten a starter brew kit as a gift and started doing extract batches. I have done about 20 5gal partial boil batches in my aluminum 5 gal kettle that came in the starter kit on the stove top. Over all I have been impressed with the beer I have made.

I have decided to upgrade my set up and move to a dedicated space in the bsmt.
Currently installing hood fan (400 CFM ) and utility sink into the space. Also getting 240v circuit for induction burner wired into main panel.

I have purchased the Avantco IC3500 induction burner.

Now my questions and need for advise come from the purchase of a kettle.
I would like to continue to do a few extract batches, move to a full boil instead of partial boil. As well as give BIAB a try.

What are your recommendations for an induction capable kettle that will allow me to do a 6 gal extract boil as well as get my feet wet doing a 5gal BIAB

This will be a middle of the road step up because I know eventually i'm probably going to go with a nice 3 vessel set up but thats down the road a while.

10g kettle with a good tri-clad. This will also work fine with a 5g 3V system. I'd say that's the first parameter to decide on, the volume of the kettle.

I would love a Spike kettle, unfortunately they don't ship up to the Great White North.

Awesome! Ok now the question is 10 gal? or 20 gal? I do see 10 gal batches in my future if the Avantco IC3500 could handle it.

If you are going to do 5 gal BIAB, a 10 gallon is sufficient for all but really big brews. With BIAB, the less head space, the better your mash temp is going to hold. Even with a huge grain bill, there are ways to get it done with a 10 gal. Biggest I'd go would be 15. If you are going to do 10 gal brews, then go with the 20. You need to decide your batch size.

Buy the 10 gal. kettle. You can always use it as an HLT in a 3-vessel system later.

Going to 10 gal requires other considerations. I wouldn't base it solely on your heating element.

Have the 3500 burner(love it) also a 15 gal Spike (massive love),one of the features i like about the Spike is the temp probe next to the valve instead of on top,it works at 2 gal. You don't need a 20 gal kettle to do 10 gal batches with induction. I made a double layer refletix insulation wrap that is removable, along with a quilt(ones with snowmen work best) for the cover I can do an 8 gal full volume BIAB mash and only loose 3* in 60 min. That's for a 5 gal batch and a 90 min boil. I use a 3 vessel system for 10 gal batches and am boiling 13.5 gal on the 2700 setting for the first 10 min or so, then to 2900 or 3100 depending on gravity.

Where does one find a quilt with snowmen? ISO.....
