Would like to put together a big malty, yet hoppy Belgian Red Ale. My first run at working up this recipe. Please provide thoughts/comments.


Grain Bill

6 lb Belgian - Pale Ale 44.4%
4 lb German - CaraHell 29.6%
2 lb Belgian - CaraMunich 14.8%
1 lb Belgian - Special B 7.4%
0.5 lb Belgian - Caramel Pils 3.7%
13.5 lb Total



Hop Bill

1 oz mosaic Leaf/Whole First Wort 22.82
1 oz mosaic Leaf/Whole Boil 30 min 28.96
1 oz mosaic Leaf/Whole Boil 0 min
1 oz mosaic Pellet Dry Hop 5 days

Yeast Wyeast Ardennes 3522
Primary fermentation 10 days total @ 72º.
 
That's at LOT of cara....


You might consider some candi syrup for color and flavor to keep it digestible.
