I see many people brewing belgian strong ales like to like to use a secondary after a 3-4 week primary. what are the advantages of using a secondary after a long primary?
The beer needs to age months and not terribly flocculant yeasts need to clear. You can bulk age in a secondary carboy, this is relatively easy. Or you can keg/bottle, and have more sediment on the bottom of the keg and age in that.
