Hi all. Just did my first AG attempt yesterday. Set the kettle in the sink to cool with ice bath for awhile was just not cooling off (next batch will use the bathtub) so I poured it into a bucket so I could cool it in the fridge overnight. Well looks like I have a bit over six gallons of wort. Took a gravity sample a little bit ago. Came up at 1.045 a bit low as this recipe says I should have 1.051.
I have not pitched the yeast yet. Could I boil off some of the water or just pitch it and let it ride. I know that will make it a bit lighter beer.
 
You can but you can also boil up a lb of DME, cool it and add it to the wort and raise the gravity up to 1.054

I'd let it ride where it is. If you had it in the fridge over night are you adjusting for the temperature of the wort. Adding more is probably pushing the limits of your fermenter.

By fridge I mean fermentation fridge at 60
 
Decided to pitch it and let it ride. It's in the fermenter fridge. Gonna let it set at 65 deg and see how it goes.
