Thanks, I enjoyed it. I have a very weak scientific background myself and while I'm trying to improve on that, it definitely helps to have things simplified like this.
 
You have a maltster???

I am jealous...

Sometimes I'm my own maltster (my handle gives that one away) and sometimes I get my malt from my LHBS, but I actually don't have a local go-to malthouse, unless you count Rahr.

You might already be aware of this, but there are some small-scale craft malthouses that will sell to home brewers. Riverbend Malt House from Asheville, NC does, and they're close to you.

Glad I could make it readable for you! Science writing can be so inaccessible, so I really appreciate when the science-y topics in home brewing have been made digestible for us commoners.
