Tan, non grapefruit-ie IIPA recipe?

I am wanting to create a IIPA that is more on the tan side and has less of a grapefruit flavor. Any advice on the recipe below but would be appreciated!

5 Gallon IIPA, Partial Mash, 60 min boil

Mash:
6 lb Pale 2 Row (US)
3 lb Maris Otter
1 lb Caramunich
1/2 lb Carapils / Dextrine

Late Addition:
3 lb Light DME

Hops:
1 oz Citra (60 min boil)
1 oz Columbus (30 min boil)
1 oz Citra (5 min boil)
1 oz Citra Hopstand x 15 min

Dry Hop:
.75 oz Citra and .5 oz Columbus x7 days
.25 oz Citra and .5 oz Columbus x 3 days

Yeast: Safale 05
Misc: Whirlfloc Tablet 5 min boil

I'd double or triple the number of late addition hops while working in Amarillo and simcoe in place of the citra.
 
I don't think you need the carapils given the whole lb of caramunich and the fact that there is likely some in the DME. I would drop back to more like a half lb total of crystal, maybe .75 if you really like it, and replace some of the DME with sugar. I agree with upping the late additions.
 
Thanks for the advice. The reason I chose Columbus and Citra was due to my hop "cheat sheet" staying that Columbus was more of a "pungent/spicy" and citra was "citrus without the pronounced grapefruit flavor of Cascade". Based off the recommendations, would something like this be a bit more like what I'm looking for?

2 lb Light DME

Hops:
1 oz Simcoe (60 min boil)
1 oz Columbus (30 min boil)
1 oz Amarillo (5 min boil)
1 oz Citra Hopstand x 15 min

Dry Hop:
1 oz Amarillo and .5 oz Columbus x10 days
1 oz Simcoe (perhaps Centinial?) and .5 oz Columbus x7 days

Yeast: Safale 05
Misc: Whirlfloc Tablet 5 min boil
 
Personally I get more grapefruit from amarillo and simcoe than the two you had - maybe not as much as centennial plus simcoe and cascade plus simcoe but still. Citra it it's own distinctive character, kind of sharp and citrusy but not in your face grapefruit like the others at least to my palate.

I guess my interpretation of grapefruit and yours differ. Yes, grapefruit is citrus flavor; as is orange, apricot, tangerine, etc. Imo, a double IPA should have a citrus flavor. I was looking for advice on a recipe that I would like to try without a pronounced Cascade-grapefruit flavor.

Sure, it's a small detail, but I personally don't think every citrus hop gives a brew a grapefruit flavor. Then again, I've only been doing this a little over a year so I decided to seek advice from folks with more brews under their belt.
 
Agree on moteuka. Also agree that a citrusy but non-grapefruit IIPA is quite a challenge. Also agree with loading hops towards the end perhaps losing the 60min addition altogether and focus on flame out, whirlpool and dry hop,additions, perhaps at double the rate in the recipe depending on the style you're going for... Is it a resinous DFH 120mi type IIPA or a super juicy, hazy Julius or Dinner type IIPA?
