jehenderson i as well drank your vanilla porter tonight (yeah its one of those nights) the aroma is great i get some chocolate and small amounts of vanilla in it. I drank this alittle bit warmer than i typically would have teh style, but i get a TON of vanilla at this warmer temp. I really like this one, i think this is the best out of all the ones that i have had from you.

this is what i have right now... (the one i had brewd before i have not tried yet.. its in the keg waiting for teh fridge.... but when i tasted teh hydro sample, it was real close!)

this one that im brewing this week is almost identical that im taking up north for a weekend camping with some friends

4.59 lb 2row (can use pilsner but i thought that a tad bit more maltier taste couldn't help)
3.22 lb wheat
.92 lb flaked wheat (i forgot this one last time so it was a bit lighter by a good 8 pts)
.47 lb carapilz

1.5oz tettnang 4.1% at 60
.5oz tettnang 4.1% at 10
1oz lemon zest (fresh) at 5min
2 grams grains of paradise at 5 min (fresh crushed or ground)

(next time i do this not this upcoming week but later this summer im using hallertauer mittelfruch)

mashed at 154 for 60
yeast used wyeast 1272 american ale II (more fruity flavor)

im brewing this Thursday as well as dfh 60 (bringing three kegs up to a camp for a weekend with friends, as stated before)

I think they use pilsner malt just because it is very common in recipes I have seen to pair up what malt with pilser, i.e. the 2-row will be a good addition. The blood orange hefe used CM-PALE in place of pilsner and I liked it.

And Since I have tettnang on hand, I might be able to squeeze by with that in place on hallertau. Funny you did the same!

did you up the grains of paradise based on other recipes (I saw 1g for 5g)?

Your buddies better appreciate your hard work for their easy drinking :) Way to chew through that grain!
 
oh it was a 5.5 gallon recipe, sorry about that one... i really think that the tettnang is more of the style of hops in this brew than the hallertau... i know sam adams uses the hallertau in like everything... but tettnang is the one to go with! haha

for what i saw 2 grams is enough for a 5 gallon recipe, you really dont want to go much more it might be very over powering.... when i tasted my sample warm... it was noticeable but not over bearing... i even went to Austin brew.. and just looked it up.. and they recommend 2grams per 5 gallon batch and no more. i was surfing around for various other recipes and settled on 2 grams.

tell you the truth, even warm for some reason it was really really good, and i typically dont like the tested beer when it is warm an flat.

oh it was a 5.5 gallon recipe, sorry about that one... i really think that the tettnang is more of the style of hops in this brew than the hallertau... i know sam adams uses the hallertau in like everything... but tettnang is the one to go with! haha

I had planned on going 2 grams for a 10g brew - that recipe was a mistake with 1oz for grains of paradise. s/b 1g. Maybe I sould be considering 4g instead
 
sadly, the keg i have filled right now is awaiting the fridge after i finish one other keg (almost gone), would be gone if the kegorator didnt crap out on me... i would bring you a bottle so that you can see what the what i did. the grains of paradise broken up smell so good!

when you plan on brewing this? this weekend?

Was considering brewing this weekend. Was thinking a pale ale, or this, or maybe a pale ale AND this :). I kinda want to keep working through my wheat since I know it will lose appeal in the fall for me - so this recipe is appealing. Especially since I don't think I am a fan of witbiers. I like the BM bloon moon clone, but it isn't a rebrew for me. I think wits just aren't my style. I like them, enough to have a few, but I would never chase them down and buy them in the store ;)

I do know I really like sams summer ale. Would love to have this on tap.... love to!
 
the good news is that i think I have some WL051 (wyeast1272) yeast kicking around. It is pretty old, but I might put that on a small starter and see where it stands!
 
i used that strain of yeast because its more of an "east coast" strain.. so for what i have read... so i believe it blends much better with the sam strain than just a neutral yeast.

well, if you dont brew until after the 4th of july, ill throw this one over the week to carb up while im gone and bring you a bottle before next weekend if that happens, im almost done with my fridge, should have it operational today....

that and i get to bottle dennys rye ipa... 10 days of dry hopping, i opened the fermenter last night because i saw little while crusties in there, but i was reading its just the oils and water mixing from the hops... (boy did it smell good)

I agree on the yeast - I never knew that it was a wheat beer, i.e. a witbier strain or similar just doesn't seem right to me. I will stick with that 051/1272 and see where it leads.

maybe we can do a pre-swap swap with a few bottles we have on hand

Since you are a hop head - I really think you are going to love Denny's wry ipa. the rye adds a spicy character that really works well in an IPA and gives it more depth. I know I have said it before but... it is one of my very favorite brews I have ever done. Denny got this one down just right. If it is mold, just drink it quickly before any off flavors develop :)
 
Not to interrupt your beer tasting and discussion, but is there any interest for another grain buy sometime this summer? All my brewing of late has put a serious hurting on my grain supplies and I know a bunch of other people that are running short.

Also, anyone know if there is a place to rent a cider press in the area? I got a source for English perry pears and am looking to make maybe 10 gallons in late summer.

hey no sweat - you know you are just as much a part of this thread as anybody else ;)

Not sure about grain interest - I haven't gotten any PM's asking since our last one. However - if we can get ~20-30 bags of tentative interest we could open a buy potentially. Post your interest to this thread if you have any on a new grain buy or splits. Once we get some interest accounted for I can start a new thread. I will have to check my stores, but I know personally I am pretty well good except for a few specialties (maybe).

We might have to change the payment process. But that remains to be seen (I will have to check with our buyer). We hit a stumbling block because they thought he was improperly using paypal and not paying fees. However that is a whole other issue.

As for the press, not sure on renting one. However, I do have a large press (I think I showed you it). Perhaps we could work something out (maybe a gallon or 2 of perry, or something else?). We would have to press at my house though, so that might be a little tougher to work around.

I have a sweet pear tree too. Not sure the variety, but possible that we could use for blending. Last year we had a bumper crop, probably 10-12 bushels at least. I think this year will be a smaller crop,... but still.

The perry pears I found are supposedly from English rootstock brought over in the late 1700's for perry production. I am told they are very bitter, so I was planning on mixing them with some sweet pears from a tree I have at my parents place. Should be interesting. If I can't find a press, I'll be sure to let you know and we can work something out.

That is pretty wild about those pears. It will definitely be a very cool experiment. Once I try my hybrid perry/cider test I did this year I will let you know how it came out. Be warned though... pressed pears is a PITA compared to apples. They get gooey and it is really hard to get a good press out of them even with a good shredding.

I would love to even try one of those pears. I was going to buy pear trees for perry this year, but instead I held back and focused on my home apple orchard (have some good cider varieties in there though).
 
it wasnt mold but it was just the oils on form the hops, so i im happy about that... the sample i took was pretty good i chilled it and it was nice and bitter with alot of hops.. so it can only taste better when carbed up!

about the summer ale, if your going to wait until for a week or two to brew it, ill bring them out next friday to you, im leaving this firday and wont be back until wed, so ill throw the keg in teh fridge to get carbed up and it should be good to go when i get back.
 
Tell you guys what. I haven't heard back from the buyer - I asked him if it was still on the table to do a buy. Once I Hear back I will start a new thread and we can go from there. If it takes a few months or days to fill it we will let it ride. Before I start the new thread though - I want to confirm the buyer is still up for it.
