I have an open fermenter and one that has a session and getting transferred to secondary Sunday that is using 05 yeast so I could pitch onto the yeast cake. I'm trying to get some brewing in this weekend and hopefully use only existing supplies. Moving to all grain. After I use up the lme. I can only ferment between 65 and 70 right now. Looking to either make a half batch or 5 gal. Here is what I have:
8+ lbs pilsner lme
~.5 light dme
~.75 Briesse midnight wheat
~.75 chocolate malt
~.5 carafe III
~.8 dark Munich malt
~.25 carapils
Hops:
2 oz cascade
.75 Willamette
.75 mixed assorted simcoe, cascade, citra (was gonna dry hop with but changed my mind)
Yeast:
The yeast cake of 05
Fresh 05
San Diego super yeast - planning to use next weekend for an IPA
Other:
4lbs corn sugar
Amylese enzyme
