Thanks to the cold here in the PNW my fermentation room is cold. I have two options 54F and 70F. I pitched s05 last night and had to move it to 70F today. Just no getting a bubble every now and then. Would you reccomend keeping it at 70F even though the ferment will get the beer even hotter? Or should I start the ferment at 70F and move it to 54F hoping the ferment temp keeps it warm enough to stay active? I want to avoid esters. I'm thinking I should just leave it since a swing in temp might do it more harm than necessary.
