I'm planning my next brews and I'd really like to brew a Strong Scotch Ale/Wee Heavy.

But I keep reading that this beer needs a long, cold and stable bottle conditionning period.

Now, I can live with the "long" part. But stable and cold is more of a problem, as the only thing I have is a fridge (which is not really suggested from what I gathered, as fridge temps can vary quite a bit). I could always give the bottles a cold bath, but I'll have a hard time keeping stable temps if I shoot for below-50 degrees.

So... is the cold conditionning even necessary? Would 50F degrees be okay?
 
I have a 2YO Wee heavy in my 60 degree basement, it is incredible, better each year. I don't think constant cold is so important as avoiding warm, my basement is rarely > 65 degrees.
 
there is a guy in the for sale forum selling a fermentation thing, cool brewing, that is like i big water tight insulated bag that you could put your fermentor in and swap out frozen 2 liters once a day to keep it cool. Some will fill theirs with water but I am not that crazy.
