This is my first post but I have spent a lot of time looking at these forums and have to say they have been super helpful.
I brewed an all grain imperial stout about three weeks ago. Had to do a half batch because my 5 gallon mash tun was too small to get enough grain in for a full. Ended up with about 3 gallons. It is currently in primary in a five gallon carboy. I am not real nervous about oxidization now because it should have a good layer of CO2 over it. I have three ounces of cacao nibs soaking in four ounces of bourbon that I want to add and leave in the last two weeks before bottling.
From an oxidation standpoint, am I better off simply pouring the cacao and bourbon in to the primary at week six and leaving it there until I bottle at week 8, or should I rack it over to a three gallon secondary and add the cacao and bourbon? Thanks for any input.
