I have 2 containers of LME , I was not ready to brew and threw them in my beer fridge.
Now I need to free up space and I have to move them out to room temp.
Will this create an issue?

Could I put them in the freezer
Or should I keep them cold ( now that they are already cold)?

I would put the LME in the freezer. Freezing won't change the structure of the fermentable sugars and there is not enough water content to rupture the containers if the LME is in a plastic jug or bag. I'm not sure if a tin of LME would survive without a rupture.

I prefer to keep'em in the fridge. Not sure about freezing. They might still expand as most things do that aren't solids or ice cream.

I've been storing containers of LME at room temperature. I've had some laying around for a Brown Ale that I'm going to brew in a few weeks. Its been laying around for over two months now. Should I switch it to the fridge or discard it?

I've had some wheat LME that I've had in the fridge for going on 4 years. No mold or anything funky. I use it for starters for wheat beers (since it's wheat LME). I'm surely not going to use it in a beer or anything. So, the moral of story....in the fridge, your golden.
