So, I had a brew day today, got my dunkelweizen started. The store sells hop pellets in 1 oz increments, and they come in a vacuum packed pouch. I bought 2 packages of hops and used 1 and a quarter, so I have 3 quarters of a package left. The package wasn't cold when I got it so I don't think I need to refrigerate the leftover hops, but is it OK if I leave it in the package sealed with a rubber band? Would it be better to use my FoodSaver to vacuum pack it?
 
Vacuum sealed and in the freezer is going to give you the longest shelf life. A rubber band around an opened package left out is going to give you the least amount of shelf life. The rubber band while in the freezer will give you something in between.

If you have a food saver and don't plan on using the hops for a while and really want to save them, that's going to be your best bet.
 
I keep mine in a zip bag with air pushed out and then that goes into a plastic air tight container in the freezer. If I have no plan on using them any time soon then the Food Saver will be used.
