Storing beer

After the beer has been bottled and been sitting for a couple weeks, is it safe to store in the garage or will the swing in tempature affect the taste? The garage has been around the forties and fifties. I wanted to put my beer in the garage to condition it. Is it cold enough?

Yeah that's cool. As long as you have given it about 3 weeks at 70+ or close to it (less than 70 will take longer to carbonate) you can store it wherever. Before you drink it though give it a couple of days (depending on the beer) to cold condition in the refrigerator. Giving it a few days will cut down on the "chill haze" produced from putting the beer in a cold climate.

That's cold enough. 50-55F is ideal, and make sure it is dark or you have the beer covered to avoid skunking. Here's a good guide on storing beer:

Also remember that it takes longer for the beer to adjust to the temperature swings than air, so its temperature won't swing as much as your garage's temperature.

It's been sitting at 70 degrees for two weeks, I'll give it another week then move it. Thanks

That's what I'm doing with all my beers. Condition/carbonate for 3 weeks,then into the fridge for a 4th week. I figured that would give it ample time to clear up any off flavors,carbonate,& get nice & clear.
