Given the dimensions of my mash tun, BeerSmith is telling me to add water only to the Protein Rest, and to only heat the saccharification and mash out with the water added for the protein rest. Afterwards it tells me to sparge it.
Is this right?
Can it be done?
How does this affect the process?

Yes, what beer****z says will work. The program probably figured out the tun isn't big enough to handle the amount of water needed to step up temps for the recipes grain bill. The program figured that you would know the tun was too small and that you have the right equipment to work with. Like a tun heated by some other means. So, that is the direction the program led you in. Step mash is a step mash, whether, infused or directly heated. If the tun is too small for adding infusions or if the tun can't be heated by other means, allow pH to drop and pull a decoction. The decoction needs to be thick. Use it to step the temps. Boiling water or boiling mash, what's the difference? From what you wrote, it appears that beer****z directions call for the water for the protein rest to be enough volume for the entire process. All you'll need to figure out is a way to accomplish the task with not having the right equipment. How will what, affect the process? There is nothing wrong with the process. How you perform the process is what will affect it. It is a learning curve and that is good....Brew on!!!
