I've brewed 7 or 8 IPAs in my short brewing career. My base recipe uses 8 lbs extra light DME and 1 lb crystal 40L for steeping. I started out with all amarillo as the hops and have tried to change just one ingredient with each brew, introducing Simcoe and Centennial into the mix in different amounts and using Warrior for bittering. For my next brew I'd like to keep my hop schedule the same as the last and change just the steeping grains to adjust the flavor. Currently on hand I have a few pounds of 40L, one pound of 60L, and 1/2 pound of caravienne. My first thought was to use the full pound of 60L in place of the 40L and see how that works. I'm also considering using 1/2 pond of 40L and 1/2 pound of 60L, or just 1/2 pound of 60L. My problem is that I don't know enough about them to know how they affect flavor or what combinations even work in an IPA, so I'm looking for suggestions. Thanks!
 
Go with your first thought (use a lb of 60 instead of 40). That'll be a significant enough change to hopefully show you the difference between 40 and 60, but it's still not going to be really crazily different.
