New to cider making first batch.

I have a batch of the now famous Caramel Apple Cider from this forum ready to bottle.

Not sure if I want carbonated or still cider. So I want to split a batch 1/2 and 1/2.

Do I just move it to my bottling bucket and add the brown sugar and apple juice concentrate. Then bottle 1/2 for a few days of carbonation and then add potassium sorbate to the remaining half? Do I wait or bottle right away?
Oh and I will pasturize the carbonated bottles when ready.

I think I read to let it sit for a day but not sure if a day in a half filled bottling bucket would hurt it.

Help please
