Summer in the UK will soon be gone (two hot day and a thunder storm) so I looking to provisions for next year.

If I follow the usual method ferment lager carbonate I'm short of freezer space and Corny kegs to lager in so I'm thinking of changing my procedure and I'd value your thoughts on two ideas:-

One.
Ferment finishing after the 18°C rest.
Cold crash 5°C for some days.
Transfer and lager at 0°C for say 10 days.
Bottle and carbonate in the usual way.
Continue to lager by simply storing cold over winter.

Two.
Ferment finishing after the 18°C rest.
Cold crash 5°C for some days.
Naturally carbonate in my Corny keg for two weeks 20°C.
Lager for ten days at 0°C
Bottle using a Counter Pressure Filler.
Store cold over winter.

Or the least financially viable.

Get more kegs and a bigger freezer.

Thanks. Aamcle
