How long will the specialty grains keep once the have been crushed?

What is the best way to store them while waiting to brew?

Store them in a sealed container or a ziplock bag, try to get the air out there. Place the grains in a cool, dry area. If you store the grains properly they should last a couple of months, if they are whole they will last over 6 months.

Thanks, they have been in a Ziploc in the basement for about a month now so they still should be okay. I'm planning on brewing this weekend but I have said that for the past four with not much luck.

You're still ok, but if you can't brew this weekend, I'd put them in the freezer.
