Back in December last year (2010) I went to the LHBS and bought ingredients for two different beers. one being a belgian dubbel and something else... Well long story short the beer I wanted special B in got special Roast instead....and this is how this beer came to be.

used Special Roast instead of special B..... mashed High 160. Mashed for 3 hrs.. measured OG was 1.098 diluted with water down to 1.084-86
HUGE FERMENTATION, nearly clogged airlock, temp has been between 62-70 deg



Ok now this beer has been doing nothing but getting better with age..I've drank all my 12oz-ers long ago, but tonight I cracked open one of 10 bombers that I had bottled...wow. I'm not tooting my own horn here..but I didn't think I could concoct a beer like this.
It is totally against style guidelines but turned out well. the malts compliment the yeast character and there's enough sweetness to balance out the hops (actually a bit to sweet) but not overboard like some IIPAs so Im going to lower the Mash temp next brew.

Just wanted to share the word that you can brew beer thats not to any style at all and it can still turn out Wonderfully!!
