Last night I learned a valuable lesson. I had made a Raspberry Wit and started fermentation. At the same time I made a side batch just over a gallon of sour mix using a sour mash method. The sour mash was somewhat buttery so after 2 days I boiled it for 15 mins, cooled and added it to my already fermenting beer. I wanted to get the yeast at its peak to clean those off flavors. Everything was great for about 2 hours until I heard a loud pop and my guest bedroom closet was covered in raspberries, hops, foam, and lactic acid now I only have about 3 gallons of my beer, a mess to clean, and an unhappy wife...

Looks like a good excuse to tile, insulate, and temp control your brand new brew closet!
 
just get a cheap chest freezer off craigslist and a temp controller.

The sour i brewed a few months ago needed a blow off. i havent needed one in a long time. got it on before any eruption though.
 
I have this already and a FermWrap. The only issue is that the condenser doesn't work on the fridge. I plan to try with a heat lamp and use the internal fan to cool. I don't think it will fluctuate much as long as the heat lamp functions properly.
