Brew 10g of an American Wheat, split in 2 fermenters. Great fermentation, in my ferm chest. I hit my attenuation and FG, so I pulled the blow off tubes and replaced with stoppers.

then did not adjust temp to cold crash.

I must have had a bit more fermentation, because when I checked two days later, both caps had blown off. So my beer had been sitting exposed for a while. Damn it.

I'm guessing that because my ferm chest is reasonably sealed and the fermentation was complete, my risk of contamination is low. Also hoping that because the beer was slowly finishing fermentation I had a CO2 'cap' within my fermenter providing an oxygen barrier.

So, my diagnosis, is HDWHAHB, and maybe put this beer up for consumption quickly to avoid staling.

Any thoughts?
 
Many traditional hefe's are open fermented... I think it will be fine. If you were at or real close to FG then the alcohol wouldn't really allow anything else to take hold. So, yes. RDWHAHB. Might even enhance the beer... I might try an open fermentation with the next wheat if I don't get the strength of character I want with the one I have going now.
