Remember that you will only get aroma and a little flavor from the dog. If you want bitterness, drop one in at 60 minutes. 
You'll be ok.
But hey, buy a turkey fryer setup so you could brew outdoors. Just watch out for bird sheit or next-door neighbors falling in your brew pot
