Brewed my first beer last april.a whitbeer. After bottling it carbonated in two weeks. my last few brews,pumkin ale, bourbon porter and petite orange took up to 2 months to carbonate! temp in my basement is usually 65-75 degrees and have had very active fermentation activity. Have used both cooper tabs and dextrose for carbonation. should I add more yeast at bottling? what kind and how much? thanks
 
What were your FG readings like on the slower-carbonating batches? Witbiers usually have lower gravities, so 2 weeks is reasonable, but pumpkin ale and bourbon porter sound like they would probably be heavier. The higher your FG, the longer it can take to fully carbonate, and 2-3 months is not unheard of. Adding additional yeast probably won't make any difference.
 
Always use a secondary fermented and leave it in for the recommended time the kit calls for.I haven't. taken any gravity readings,unfortunatelly ! Feel better now from your advice! Will check gravities from now on and wait out thecarb process ..Thanks!
 
It's when you put your fermenting vessel in a fridge or ice it down so the yeast will drop out of suspension right before you bottle. This gives you a clearer beer.
 
Some say yes, some say no... I don't really know. I don't cold crash, and my beers still come out real clear.
