Has anyone tried using flavour and aroma hops additions ONLY? I'd like to get a lot of hop flavour in a pale ale and not an overpowering bitterness. The IBU will still work out to what I want for the style though. So something like:

.5 oz @ 40 min
1 oz @ 20 min
1.5 oz @ 10 min
2 oz dry hopped (~10 days)

With a hop that's 7% AA that adds up to about 37 IBU. Has anyone tried something like this before? What other effects would I be missing out on?

Furthermore, would I need to do a full 60 minute boil if I really only need 40 minutes?
 
I don't think you need to boil any longer than you want; as long as you have your hot break, you're good.

As I'm sure you know, the longer you boil, the more more you drive off hop aroma and extract bitterness..up to a point.

If you really want hop aroma, make an addition at the knockout stage, when you stop your boil and chill your wort.
 
I've never heard of this technique but like dave said, if it's aroma and flavor you're aiming for with a mild bitterness, just sue a low alpha hop for bittering, then use more hops for the 20min mark and flameout. Although I suppose if you use enough hops for flavoring and aroma, you'll get the little bitterness you'd need maybe?
 
you may need the whole 60 min boil for boil off and driving out DMS.

if you're doing extract, you dont need a 60min boil. if its PM or AG then you do, in which case might as well hop a bit early. I have done the technique before and it was quite good.
 
One of the brews I really enjoy and constantly keep on hand goes like this:

30 min .5 oz Saaz
10 min .5 oz Saaz
2 min .5 oz Saaz

1 week 1 oz Columbus Dry hop

I came up with this recipe by brewing the same brew over and over tweeking the hop additions and other things until I was happy.
 
Awesome, thanks for the info everyone! Hopbusting -- at least I now know the term to do some more searching. I think I'll try this out for one my upcoming batches.
