I've been loving the Simcoe-Amarillo combination in my IPAs and just purchased some Centennial to experiment with. Here's the extract recipe I'm considering. Comments appreciated.

Full boil.

8 lbs. DME
1 lb. Crystal 40

1.25 Warrior (17.5%) @ 60

.16 Simcoe @ 20
.16 Amarillo @ 20
.16 Centennial @ 20

.16 Simcoe @ 10
.16 Amarillo @ 10
.16 Centennial @ 10

.16 Simcoe @ 1
.16 Amarillo @ 1
.16 Centennial @ 1

Dryhop 7 days:
.5 Simcoe
.5 Amarillo
.5 Centennial

US-05 yeast
 
Instead of going with an ounce each of the three finishing hops, I'd go with 2 and split the extra between 0 and dry hop. It is hard to overhop a big IPA, especially if you are doing a partial boil.

I might also lower the crystal and add a bit of highly fermentable sugar to ensure it finishes dry. Otherwise looks tasty to me, should be a good hop combo.
