how can i get more 'fizz'? i have read adding more sugar will do this, but are there types of fruit that create more effervesce than others? also, does the environment of the second fermentation (temp, time etc.) make a difference?

Normally you are talking about carbionation, which should be proportional to sugar content and yeast activity in converting it to CO2. So increasing sugar content and balancing your SCOBY towards yeast a bit should help with "fizziness" aka effervescence. But some perception of carbonation could have to do with the taste as well as serving temperature etc.
