After 1 week of wit beer fermentation (Wyeast 3944) @ about 67 degrees,my gravity is 1.023 from 1.050 of OG. The air lock had a pressure difference but no bubbling. This morning the swamp cooler temp was about 72 degrees, I gave the bucket a GOOD swirl and now it bubbles every 7-8 seconds. My question is should I keep the 2nd week of fermentation @ a little higher temp or not?:confused:
 
72° is a fine temperature for Wyeast 3944. Perhaps the beer was under pitched? A smack pack would have about half of the recommended cells for a 5 gallon (20 liter) batch of a 1.050 (12°P) ale. I would give it more time. From your description it sounds like it has slowed down but not stopped.
 
In my experience, 3944 is very slow to complete. Just keep swirling it and leave it at the 72 F place and you should be good.
