I really don’t think you need such an elaborate grist, but it won’t hurt anything. I suspect if you made this with the GP, a couple lb of flakes oats, and maybe the honey malt, it would be indistinguishable.
Falconer’s Flight isn’t going to be quite that NEIPA juiciness; more of a citrus/dank thing. Still sounds very tasty to me. If you do want to accentuate the juiciness more, I would either leave out the bittering charge or reduce it to 5-10 IBUs. I find the big whirlpool and dry hop additions give so much aroma and flavor that the extra bittering kinda fights. If that makes sense...
