secondary fermentation for Saison

Hi All!

I made a Saison a week ago. it is still fermenting.

I'm flying to a month and a half vacation in India in two weeks :)D) so I'm wondering what to do regarding when to bottle it.

should I bottle it after I come back? (10 weeks in primary)
should I bottle it just before I leave? (3 weeks in primary)
or should I rack to a secondary and bottle when I come back? (3 weeks in primary, 7 in secondary)

am I supposed to age Saisons in secondary, anyway?
 
Choice is yours....I fermented mine for 2 weeks 'til it dropped below 1.010 and now it's sitting in the secondary, in the fridge for another two weeks before I bottle it (and of course let it sit in the bottle for another couple weeks).
 
if fermentation is finished (or VERY close) before you leave...i would transfer to secondary.

otherwise, i would simply leave it in the primary. it'll be fine for a couple of months.
